By starting with leaving things in their place, outside the commonplaces.
So he swims upstream and, from Parma, reaches the clean waters of the North Atlantic where the Distensive Control System applies — born of passion and refinement, instinct and wisdom, without compromise.
In these pure waters the salmon live in their native environments, free to move in wide spaces following a natural, healthy and controlled diet that gives the flesh a remarkable balance of nutrients with little fat. A documented supply chain, studied in every detail.
Every crucial stage of processing takes place at the Parma facility, according to the recipe perfected by Claudio Cerati more than ten years ago: filleting executed to the highest standard; delicate curing with salt and sugar, kept separate and never together; smoking with beechwood from the Parmese Apennines (D.O.P. certification in progress) — the distinctive touch.
The journey closes with rigorous quality controls that certify the organoleptic properties and complete wholesomeness, so the salmon can be packaged with the degree of perfection it deserves — the very highest — ready to set off in new directions.
