Upstream smoked salmon is the result of a noble supply chain headed by distensive farming. It is a prized salmon: the fish’s healthy diet and freedom of movement mean lean mass replaces fat. There is no trace of hormones or antibiotics, no room for forcing, ever. The smoking is sweet, more delicate than traditional methods, carried out with beechwood from the Emilian Apennines that gives the salmon aromas and flavours never experienced before.
Upstream smoked salmon comes from marine areas with among the strictest aquaculture veterinary standards in the world. We are in the waters of the Faroe Islands, in the environment the fish desires: this is where Atlantic wild salmon enters the production chain. With the Distensive Control System the salmon remains in its natural space, free to move; the fish is not subjected to stress and is followed by rigorous dietary, veterinary and health monitoring.
